Summer barbecues are right around the corner, and nothing is better on a burger than a heaping helping of onion marmalade. The latest Coastal recipe shows you how to make and store your very own preserve that can last for months. It just might be the perfect condiment for lots of compliments. Ingredients
- 4 large onions (thinly sliced)
- 3 cloves garlic (thinly sliced)
- 3 tablespoons olive oil
- 1 teaspoon black mustard seeds
- 1 teaspoon coriander seeds
- 3 tablespoons apple cider vinegar
- 4 tablespoons dark brown sugar
- 1 ½ tablespoons fresh ginger (grated and peeled)
- Salt and pepper to taste
- 4 tablespoons water
Directions
Combine onions, garlic, olive oil, mustard, and coriander seeds in a large sauce pan or Lodge pre-seasoned cast iron skillet from Coastal. Stir well to combine. Cook gently over low heat for 20 minutes. Stir occasionally.
Stir in vinegar, grated ginger and brown sugar.
Continue to cook for another 10-20 minutes over medium heat until the onions have become translucent and the marmalade is well reduced. Continue to stir occasionally.
Add the water and cook on medium-high heat for another 10 minutes. You want the marmalade to become thick and slightly sticky. Season with salt and pepper to taste.
Finally, pour your creation into a Ball mason jar, tighten the lid, and store in the refrigerator for up to two months.
